Cajun Potato Skins

Cajun Potato Skins


  • 4 potatoes- scrubbed clean, washed and allowed to dry
  • 2 Tbsp oil
  • 1 tsp margarine enriched with omega 3
  • Cajun spices- to taste
  • Salt and pepper to taste


  • Rub potatoes with oil.
  • Bake at 220 °C for 30 minutes
  • Prick to release steam and bake for another 15 minutes
  • Allow to cool
  • Slice potatoes into wedges and take out a bit of the flesh
  • Brush each wedge with some butter, season and return to oven to bake till crispy
