Cajun Potato Skins
Ingredients
- 4 potatoes- scrubbed clean, washed and allowed to dry
- 2 Tbsp oil
- 1 tsp margarine enriched with omega 3
- Cajun spices- to taste
- Salt and pepper to taste
Method
- Rub potatoes with oil.
- Bake at 220 °C for 30 minutes
- Prick to release steam and bake for another 15 minutes
- Allow to cool
- Slice potatoes into wedges and take out a bit of the flesh
- Brush each wedge with some butter, season and return to oven to bake till crispy
