Ingredients

  • 1 large eggplant- peeled and cut into cubes
  • 1 can chickpeas
  • 3 onions-sliced
  • 4 tomatoes- peeled and sliced
  • 4 garlic cloves
  • 1 tbsp lemon juice
  • 2 tbsp oil

Method

  • Brush eggplant slices with oil and bake at 180 °C till browned
  • In a small pan, heat oil and sauté onions and garlic
  • Add the eggplant and all the other ingredients
  • If there is not enough water, add some to the mixture
  • Simmer for 20 minutes
