Okra in oil
Ingredients
- ½ kg okra- fresh- hulled
- ½ kg red ripe tomatoes
- 2 onions- sliced
- 1 clove garlic-minced
- 2 tablespoons olive oil
- Lemon juice to taste
- 1 tsp coriander dried
- Cumin (optional)- 1 pinch
- pepper to taste
Method
- Sauté okra in oil till slightly colored
- On top of the okra, add onion and garlic
- Once mixture is slightly browned, add tomatoes, lemon juice and coriander
- Add ¼ cup water and leave to simmer for around 20 minutes
- (Lebanese dish)- eaten as side salad or as main course with pita bread
