Okra in oil


  • ½ kg okra- fresh- hulled
  • ½ kg red ripe tomatoes
  • 2 onions- sliced
  • 1 clove garlic-minced
  • 2 tablespoons olive oil
  • Lemon juice to taste
  • 1 tsp coriander dried
  • Cumin (optional)- 1 pinch
  • pepper to taste


  • Sauté okra in oil till slightly colored
  • On top of the okra, add onion and garlic
  • Once mixture is slightly browned, add tomatoes, lemon juice and coriander
  • Add ¼ cup water and leave to simmer for around 20 minutes
  • (Lebanese dish)- eaten as side salad or as main course with pita bread
