Thai Tofu Burger
Ingredients
- 1.5 tsp olive oil
- 1 onion- chopped
- ½ cup mushrooms
- ½ cup carrot-grated
- 6 Tbsp bread crumbs
- 4 Tbsp ground flaxseed
- 1 Tbsp peanut butter
- 250 g tofu
- 2 Tbsp basil- fresh- chopped
- 1 Tbsp Soy sauce
Method
- Heat oil and add onions and stir till brown
- Add vegetables and cook till tender. Leave to cool
- In food processor, pulse all remaining ingredients
- Form into 8 patties and layer on a baking sheet
- Bake for 15 minutes at 180°C
- Serve in burger buns
